Even with all of these additional worries, I consider myself lucky. One of my two restaurants is still open, and I’ve been able to retain my 20 employees who continue serving steaming plates of barbecue every day. We reached 90 percent of pre-COVID level sales over the July 4 weekend, before falling back to around 75 percent. Compared to many other businesses in the Orlando area, we’re doing pretty well.
